Carrot night!
This evening we thought it would be nice to use all the fresh carrots we had in the fridge, what a lovely idea. Right away the menu was decided "Cream of carrot soup" and "Carrot cake with frosting". Must say, this was the first time I was trying to bake a carrot cake, and I found this lovely recipe.
So here it goes.
For the soup:
Carrots, peppers, potatoes all boiled together with a pinch salt and pepper. After they are soft, we blend the whole mix adding some herbs later and voilà.
*One has caramelized onions on top.
For the cake:
2dl sugar, 2dl flour, 1dl olive oil, 3dl grated carrots, 2 eggs, 1tsp baking powder, 1tsp vanilla sugar, 2tsp cinnamon powder.
Mix the sugar and eggs, once is well mixed, add all ingredients, leaving the flour for the end. Mix everything to make the dough slightly ventilated. Put the dough in a mold, with baking paper in the bottom and butter in the walls. Bake for about 50min at 200C.
For the frosting:
2TBS maitorahka (quark), 8TBS sugar, 1TBS butter, 1tsp vanilla sugar.
Mix all ingredients with a hand mixer until it is all even. Spread over the cake.
And now it's so ready to enjoy!
